Ingredients

  • 1 1/2 lb pizza dough 680 g
  • 1/4 cup unsalted butter 57 g, melted
  • 1 1/2 tbsp fresh parsley leaves chopped
  • 3 cloves garlic minced
  • 1/4 tsp kosher salt
  • 2 tbsp freshly grated Parmesan
  • 1 cup marinara sauce

Method

  1. Allow dough to sit at room temperature for 30 minutes up to 1 hour.
  2. Set oven to 375°F (190°C). Prepare a baking sheet by lining with parchment paper.
  3. Coat the exterior of a 6-ounce ramekin with oil or nonstick spray, then position it in the middle of the lined baking sheet. Add water to fill.
  4. With a digital scale, portion dough into 1-ounce pieces, making 22-24 pieces total, flatten each piece into a disk, then roll into a ball.
  5. In a small bowl, mix together butter, parsley, garlic, and salt.
  6. Arrange dough balls on the baking sheet in a ring around the ramekin. Apply butter mixture to tops with a brush; scatter Parmesan over.
  7. Transfer to oven and bake until browned, about 25-30 minutes. Carefully take out ramekin and pour off water. Add marinara to it and put back in the center of the baking sheet; brush tops with any leftover butter mixture.
  8. Serve right away.
