Ingredients

Cranberry Orange Scones
  • 1/2 cup granulated sugar 100 g
  • 1 Tbsp orange zest
  • 2 1/4 cups all-purpose flour 270 g
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter 113 g, cubed and cold
  • 1 large egg
  • 3 Tbsp sour cream
  • 3 Tbsp heavy whipping cream plus more for brushing
  • 2 Tbsp freshly squeezed orange juice
  • 1/2 tsp almond extract
  • 1 cup fresh cranberries
Orange Glaze
  • 3 Tbsp unsalted butter 42 g, melted
  • 1 - 1 1/2 cups powdered sugar 120-180 g
  • 1/2 tsp vanilla extract
  • 2 Tbsp freshly squeezed orange juice
  • 1 tsp orange zest optional

Method

Cranberry Orange Scones
  1. Set oven to 400°F (205°C) and prepare a large baking sheet by lining with parchment paper or applying baking spray.
  2. In a large mixing bowl, blend granulated sugar with orange zest.
  3. Incorporate flour, baking powder, and salt; stir until evenly mixed.
  4. Using a pastry cutter or stand mixer on low speed, work in cold butter until the mixture looks like coarse crumbs with butter bits roughly pea-sized. Set aside.
  5. In another bowl, beat together egg, sour cream, heavy cream, orange juice, and almond extract. Pour into the dry mixture and stir until barely combined.
  6. Gently fold in cranberries until they are evenly dispersed.
  7. Transfer dough to a floured work surface and shape into a circle 1-inch thick. Using a sharp knife, slice into 8 triangles.
  8. Place scones on the prepared baking sheet, leaving even gaps between them.
  9. Coat tops with heavy cream and bake for 16–18 minutes, until they turn golden brown.
Orange Glaze
  1. As scones cool, combine melted butter, vanilla extract, orange juice, and orange zest with a whisk. Gradually whisk in powdered sugar, beginning with 1 cup; if glaze is too runny, incorporate up to the remaining 1/2 cup.
  2. Drizzle glaze over the scones.
  3. Enjoy!
