Ingredients

  • 1 bone-in, fully cooked, smoked ham 8-lb, at room temperature
  • 1 cup brown sugar 200 g
  • 1/2 cup pineapple juice
  • 1/4 cup honey
  • 1 tablespoon whole grain mustard
  • 1 tablespoon fresh thyme leaves chopped
  • 1 tablespoon fresh rosemary chopped
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • Freshly ground black pepper to taste

Method

  1. Set oven to 350°F (175°C). Prepare a baking sheet by lining it with foil.
  2. Use paper towels to dry the ham. With a sharp knife, make shallow cuts across the top of the ham in a diamond pattern.
  3. In a small saucepan over medium heat, stir together brown sugar, pineapple juice, honey, mustard, thyme, rosemary, cinnamon, cloves, and 1/2 teaspoon pepper. Bring to a boil, then lower heat and simmer, stirring occasionally, until the mixture reduces and thickens slightly, about 3–4 minutes.
  4. Arrange the ham cut side down on the lined baking sheet. Evenly brush 1/2 cup of the brown sugar mixture over it.
  5. Put the ham in the oven and baste with the remaining brown sugar mixture every 30 minutes, until heated through and an instant-read thermometer inserted into the thickest part reads 140°F (60°C), about 2 hours 30 minutes. Allow to rest 15 minutes before carving.
  6. Serve right away.
