Ingredients
Method
- Heat the oven to 375°F (190°C). Prepare a 13x9-inch pan by lining it with parchment paper, allowing a 2-inch overhang along the sides.
- Arrange graham crackers across the entire pan in a single layer, snapping them into sections where necessary for a proper fit.
- Using an electric mixer fitted with the paddle attachment, beat the butter with both sugars until creamy. Incorporate the eggs and vanilla. Mix, then scrape down the bowl.
- In a separate large bowl, whisk the flour, salt, and baking soda together. Fold the flour mixture, chocolate chips, and mini marshmallows into the butter mixture. Stir only until everything is just combined.
- Spread the dough evenly over the graham crackers and press it flat. Scatter additional mini marshmallows on top if desired.
- Bake at 375°F (190°C) for 25-30 minutes, until the top is golden brown and a toothpick inserted in the center emerges clean. If the cookie dough browns before the center finishes baking, tent it with foil.
- Take the pan from the oven and lay chocolate bar pieces over the top while it is still warm. Let it cool for 20-30 minutes, then lift the bars from the pan to cut and serve. NOTE: At room temperature the chocolate bars may remain quite soft and melty.
Notes
At room temperature, the chocolate bars can remain rather soft and prone to melting.
