Ingredients

  • 1 lb smoked sausage cut into dice or chunks
  • 1 cup diced sweet onion
  • 2 cloves garlic finely chopped
  • 1 packet Knorr Vegetable soup mix
  • 8 cups chicken broth
  • 31 oz great Northern beans rinsed and drained
  • 29 oz seasoned turnip greens with liquid retained
  • 2 cups short pasta boiled to al dente and drained (ditalini or any small tube pasta)

Method

  1. Place the chopped sausage and onion into a large soup pot set over medium heat.
  2. Let cook for 3-4 minutes, until the sausage starts to brown and the onions begin to soften.
  3. Stir in the garlic; continue cooking for 1 minute.
  4. Stir in the soup mix, broth, beans, and greens until well combined.
  5. Raise to a boil, then lower to a simmer.
  6. Simmer gently until the greens become tender and the soup mix is fully rehydrated.
  7. 10 minutes prior to serving, stir in the cooked pasta.
  8. Add salt and pepper to taste if needed; check seasoning first, since the greens and soup mix may already supply sufficient salt.
  9. Accompany with a splash of hot sauce and a piece of cornbread or hush puppies.
