Ingredients
  

For the dough
  • 4 1/2 tbsp unsalted butter 64 g
  • 2 tbsp minced garlic
  • 3 1/2 cups + 1 tbsp all-purpose flour 438 g
  • 3 tbsp chopped fresh parsley
  • 1 tbsp granulated sugar 12 g
  • 2 1/4 tsp instant yeast
  • 1 tsp fine sea salt
  • 1 cup whole or 2% milk warmed to 110°F (45°C)
  • 1 large egg room temperature
For the garlic butter topping
  • 1 beaten egg for brushing the tops
  • 2 tbsp unsalted butter 28 g
  • 1 tbsp minced garlic
  • 1 tbsp chopped fresh parsley
  • flaky sea salt for finishing

Method
 

For the dough
  1. Coat the bottom and sides of a 9x13-inch pan with a light layer of butter, then set it aside.
  2. In a small saucepan, melt the butter and stir in the minced garlic. Let it cook for 1-2 minutes, or until the garlic releases its aroma. Remove from heat and allow to cool while you measure the remaining ingredients.
  3. In the bowl of a stand mixer, whisk together the flour, parsley, sugar, yeast, and salt. Add the warmed milk, egg, and the garlic butter from above. Using the dough hook on low speed, knead until the dough becomes smooth and has a soft, tacky feel, about 10-12 minutes. If the dough is overly sticky, incorporate one tablespoon of flour at a time until it is workable.
  4. Divide the kneaded dough into 12 equal pieces (use a scale for precision—67 grams each). With your hands, roll each piece into a smooth ball. Pinch the bottom seam to seal it tightly. Arrange the shaped dough balls in the prepared pan. Cover with plastic wrap or a clean kitchen towel and let rise in a warm spot until doubled in size, about 1-2 hours.   5. Set the oven to 350°F (175°C).
  6. Brush the tops of the rolls with the beaten egg wash. Bake the dinner rolls for 20-30 minutes, or until the tops are golden brown.
For the garlic butter topping
  1. While the rolls bake, prepare the garlic butter. Melt the butter in a pot and add the minced garlic. Cook for 1-2 minutes until fragrant. Remove from heat and stir in the parsley. As soon as the rolls come out of the oven, brush them with the garlic butter. Sprinkle with flaky sea salt if desired, and serve warm!
