Ingredients

  • 3/4 cup old-fashioned rolled oats 60g
  • 1/2 tsp ground cinnamon
  • 1/4 cup almond butter 64g
  • 3–4 tbsp honey 63–84g, to taste
  • 1 tsp vanilla extract
  • 1 1/2 cups Greek yogurt 340g, * (see note)
  • Fresh berries of choice for topping

Method

  1. Combine the oats, cinnamon, almond butter, honey, and vanilla extract in a bowl; stir until a sticky dough forms. If the mixture seems too dry, add more almond butter and honey.
  2. Use paper liners to line a muffin pan. Drop a spoonful of the granola dough into each cup and press down firmly with your fingers to make a compact, sturdy base.
  3. Add yogurt on top of each base, then finish with berries and any leftover granola.
  4. Freeze for at least 4 hours to set. Thaw before serving.
