  • 1/4 tsp ground ginger
  • 1/2 tsp vanilla extract
  • 1 pinch salt
  • 1/2 cup all-purpose flour 60 g
  • 3/4 tsp baking powder
  • 1/4 cup dried cranberries 30 g, chopped
  • 1.5 oz white chocolate 40 g, roughly chopped
for the frosting
  • 1.5 oz cream cheese 40 g, at room temperature
  • 1 cup powdered sugar 120 g
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • 1 tbsp dried cranberries 8 g, chopped
for the drizzled icing
  • 3 tbsp powdered sugar 23 g
  • 1 tsp milk
  • 3/4 tsp vegetable shortening

Method

for the cake bar layer
  1. Set oven to 350°F (175°C). Prepare a standard 9x5-inch loaf pan by greasing or lining it.
  2. Using a medium bowl, cream the softened butter and brown sugar until the mixture is light and fluffy.
  3. Incorporate the egg, ground ginger, vanilla extract, and salt, beating until fully blended.
  4. Stir in the flour and baking powder gently.
  5. Fold in the chopped dried cranberries and chopped white chocolate until evenly distributed.
  6. Transfer the batter to the prepared loaf pan and bake for 20 minutes, until it turns golden brown and springs back when touched.
  7. Allow the cake to cool entirely in the pan.
for the frosting
  1. In a medium bowl, beat the cream cheese, powdered sugar, lemon juice, and vanilla extract until the mixture is smooth and spreadable.
  2. Apply the frosting uniformly over the cooled cake. Scatter the chopped dried cranberries on top and gently press them into the frosting.
for the drizzled icing
  1. In a small bowl, whisk the powdered sugar, milk, and vegetable shortening until the mixture is smooth.
  2. Drizzle the icing in thin diagonal lines across the frosting.
  3. Cover the cake in the pan with foil or plastic wrap and refrigerate overnight before slicing.
