Ingredients

  • 3 cups romaine lettuce chopped
  • 1 1/2 cups cooked chicken chopped (grilled, fried, or rotisserie)
  • 1/3 cup Caesar dressing
  • 1/3 cup Parmesan cheese freshly grated
  • 1/2 cup croutons homemade
  • Kosher salt and freshly ground black pepper to taste
  • 4 flour tortillas or wraps (10-inch)

Method

  1. In a large bowl, toss together the lettuce, chopped chicken, Caesar dressing, Parmesan cheese, and croutons using tongs until well combined. Add salt and pepper to taste. Sample and mix in additional dressing if you like. Set aside.
  2. Warm the tortillas in a large pan over medium heat for about 15 to 30 seconds on each side, just until they become pliable. Transfer to a plate and cover with a kitchen towel to keep them warm. As an alternative, microwave them between paper towels for 15 to 30 seconds.
  3. Lay the tortillas on a clean work surface. Evenly distribute the Caesar salad mixture among the flour tortillas, placing it in the center of each. Fold in opposite sides of each tortilla, then roll up, burrito-style. You can insert a toothpick in the center to help keep them closed. Cut in half or serve the wraps whole.
