Ingredients

Scrambled Eggs
  • 6 large eggs at room temperature
  • 1/4 cup cottage cheese optional but recommended
  • 2 tbsp milk or dairy-free alternative
  • Salt and pepper to taste
  • 1 tbsp butter or oil for cooking
Seasoned Black Beans
  • 1 can black beans 15 oz, rinsed and drained
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt to taste
Toppings and Assembly
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 cup salsa fresca or your favorite jarred salsa
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped red onions
  • 1/4 cup chopped fresh cilantro
  • 1 avocado sliced or mashed
  • Optional: sliced jalapeños or hot sauce
  • 6 large flour tortillas 10-inch, warmed
  • Optional: corn tortillas for a gluten-free option

Method

Scrambled Eggs
  1. Rinse and drain the black beans. Dice the tomatoes, chop the onions and cilantro, and slice or mash the avocado. Set all toppings out in separate bowls to create a burrito bar.
  2. In a small skillet over medium heat, combine the rinsed black beans with cumin, chili powder, and a pinch of salt. Stir occasionally until heated through and fragrant, about 5 minutes. Keep warm.
Seasoned Black Beans
  1. Crack the eggs into a bowl. Add the cottage cheese, milk, salt, and pepper. Whisk vigorously until the mixture is smooth and slightly frothy.
  2. Heat the butter in a non-stick skillet over medium-low heat. Pour in the egg mixture. Stir gently and continuously with a spatula, scraping the bottom of the pan to prevent sticking. Cook until the eggs are just set but still moist. Remove from heat.
Toppings and Assembly
  1. Wrap the tortillas in a damp paper towel and microwave for 30–45 seconds, or warm individually in a dry skillet for 20 seconds per side until soft and pliable.
  2. Lay out the warm tortillas and bowls of eggs, beans, cheese, salsa, veggies, avocado, and any extras. Let everyone build their own burrito with their favorite combinations.
  3. Serve immediately with optional hot sauce or jalapeños on the side.
